  • 6-8 fresh small potatoes
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • Saltverk Flaky Sea Salt

Boil fresh potatoes until cooked.  Remove from water, let them cool for a bit, then cut them in half.  Bring a cast-iron pan to high temp and add oil.

When the oil is hot, put the halved potatoes, cut-side down, on the pan to fry.  Let sit for about 60 seconds, then add the butter and a generous couple of pinches of flaky sea salt.

When the butter starts to caramelize, shake the pan to see the crispy golden edge of the potatoes.  Serve up the salted, crispy goodness and enjoy.
