SALSIFY CHIPS:
- 1 lb salsify root, cleaned well
- Vegetable or canola oil
- Saltverk Arctic Thyme Salt
Rinse a fresh black salsify thoroughly and slice it very thin (a mandolin slicer works well here). Leave chips to air dry before frying - they should not be wet when dropped into the oil.
Heat oil in a pot to 325 degrees. Once oil is hot, drop in the chips, being careful not to overcrowd the pot. Fry the chips in oil for 30-45 seconds until golden brown. Remove from the oil and drain well before transferring onto a paper towel. While hot from the fryer, sprinkle with a generous amount of Arctic Thyme Salt for the perfect finish.
Use the chips as a perfect topping on pan fried fish or a nice spring salad.
